Traeger Smoked Chicken with Garlic Mashed Potatoes
Created by: Howcan Team
Ingredients
- 1 whole chicken (about 4-5 lbs)
- 1/4 cup olive oil
- 2 tablespoons of your favorite chicken rub
- 4 large russet potatoes, peeled and diced
- 4 cloves of garlic, minced
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your Traeger grill to 225°F.
- Rinse the chicken and pat dry with paper towels. Rub the olive oil all over the chicken, then season with the chicken rub, making sure to coat the entire chicken, including the cavity.
- Place the chicken directly on the grill grates breast side up. Close the lid and smoke for about 2.5-3 hours, or until the internal temperature reaches 165°F in the thickest part of the thigh. Remove from the grill and let it rest for 10 minutes before carving.
- While the chicken is smoking, place the diced potatoes and minced garlic in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes and garlic, then return them to the pot. Add the butter and heavy cream. Mash the potatoes with a potato masher until smooth and creamy. Season with salt and pepper to taste.
- Serve the Traeger smoked chicken with a generous portion of garlic mashed potatoes on the side. Enjoy!
Traeger Smoked Chicken has a rich history dating back to the early days of American barbecue. This dish has its roots in the Southern United States, where pitmasters would slow-smoke whole chickens over wood-fired Traeger grills, infusing them with a deliciously smoky flavor. The chicken is then served with a side of creamy garlic mashed potatoes, adding a comforting and savory element to the meal. The best version of this dish can be found in renowned barbecue joints across the South, where skilled chefs expertly smoke the chicken to tender perfection and whip up velvety garlic mashed potatoes. The key to this dish lies in the quality of the chicken and the wood used for smoking, as well as the perfect balance of garlic in the mashed potatoes. For a unique twist, some chefs may also incorporate different herbs and spices into the mashed potatoes, elevating the dish to new heights. Whether enjoyed at a rustic barbecue shack or a fine dining establishment, Traeger Smoked Chicken with garlic mashed potatoes is a timeless classic that continues to delight food enthusiasts across the country.
