Traeger Smoked Chicken with Garlic Mashed Potatoes

Ingredients
- 1 whole chicken (about 4-5 lbs)
- 1/4 cup olive oil
- 2 tablespoons of your favorite chicken rub
- 4 large russet potatoes, peeled and diced
- 4 cloves of garlic, minced
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your Traeger grill to 225°F.
- Rinse the chicken and pat dry with paper towels. Rub the olive oil all over the chicken, then season with the chicken rub, making sure to coat the entire chicken, including the cavity.
- Place the chicken directly on the grill grates breast side up. Close the lid and smoke for about 2.5-3 hours, or until the internal temperature reaches 165°F in the thickest part of the thigh. Remove from the grill and let it rest for 10 minutes before carving.
- While the chicken is smoking, place the diced potatoes and minced garlic in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes and garlic, then return them to the pot. Add the butter and heavy cream. Mash the potatoes with a potato masher until smooth and creamy. Season with salt and pepper to taste.
- Serve the Traeger smoked chicken with a generous portion of garlic mashed potatoes on the side. Enjoy!
