Ingredients
- 12 spring roll wrappers
- 2 cups shredded lettuce
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup cooked vermicelli noodles
- 12 large cooked shrimp, peeled and deveined
- 1/4 cup hoisin sauce
- 1/4 cup peanut sauce
Instructions
- Prepare the vermicelli noodles according to package instructions, then drain and set aside.
- Fill a large bowl with warm water. Dip one spring roll wrapper into the water for 1-2 seconds to soften. Place the wrapper on a flat surface.
- In a row across the center, place a handful of shredded lettuce, a small handful of vermicelli noodles, a few slices of cucumber, shredded carrots, mint leaves, and cilantro leaves. Leave about 2 inches uncovered on each side.
- Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Place a shrimp on the folded side of the wrapper, then continue rolling until the shrimp is tightly enclosed. Repeat with the remaining ingredients.
- Serve the spring rolls with hoisin sauce and peanut sauce for dipping.
