Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add 4 cloves of minced garlic and cook for 1 minute until fragrant.
  • Add 1 pound of shrimp to the skillet and season with 1/2 teaspoon of paprika, 1/4 teaspoon of red pepper flakes, salt, and black pepper to taste.
  • Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, melt 4 tablespoons of unsalted butter. Add 6 cups of fresh spinach leaves and cook until wilted, about 2-3 minutes.
  • Return the cooked shrimp to the skillet and toss to combine with the spinach.
  • Drizzle 1 tablespoon of freshly squeezed lemon juice over the shrimp and spinach mixture. Toss to coat evenly.
  • Serve the garlic butter shrimp and spinach immediately, garnished with fresh parsley if desired. Enjoy!
