Instructions

  • Heat a non-stick skillet over medium heat.
  • Place one flour tortilla in the skillet and sprinkle half of the shredded mozzarella cheese on one half of the tortilla.
  • Add the fresh spinach leaves and sliced mushrooms on top of the cheese.
  • Fold the other half of the tortilla over the filling to create a half-moon shape.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat the process with the second tortilla and the remaining ingredients.
  • In a separate small skillet, heat the olive oil over medium heat and add the minced garlic. Cook for 1 minute until fragrant.
  • Add the cooked quesadilla to a bowl and top with the sautéed garlic, salt, and black pepper.
  • Serve with sliced avocado on the side.
