Ingredients
- 2 large flour tortillas
- 1 cup of shredded mozzarella cheese
- 1 cup of fresh spinach leaves
- 1 cup of sliced mushrooms
- 1/2 teaspoon of olive oil
- 1/2 teaspoon of minced garlic
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 ripe avocado, sliced
Instructions
- Heat a non-stick skillet over medium heat.
- Place one flour tortilla in the skillet and sprinkle half of the shredded mozzarella cheese on one half of the tortilla.
- Add the fresh spinach leaves and sliced mushrooms on top of the cheese.
- Fold the other half of the tortilla over the filling to create a half-moon shape.
- Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the second tortilla and the remaining ingredients.
- In a separate small skillet, heat the olive oil over medium heat and add the minced garlic. Cook for 1 minute until fragrant.
- Add the cooked quesadilla to a bowl and top with the sautéed garlic, salt, and black pepper.
- Serve with sliced avocado on the side.
