Ingredients
- 1 pound fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup pine nuts
- 1/2 cup onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon sumac
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 pound pizza dough
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 5 minutes. Remove from heat and let cool.
- In a large bowl, combine the cooked spinach and onion mixture, feta cheese, mozzarella cheese, pine nuts, sumac, salt, black pepper, allspice, cinnamon, and nutmeg. Mix well to combine.
- On a lightly floured surface, roll out the pizza dough to about 1/4 inch thickness. Using a round cutter or a glass, cut the dough into circles, about 4-5 inches in diameter.
- Place a spoonful of the spinach and cheese filling in the center of each dough circle. Fold the edges of the dough over the filling, pinching to seal and form a triangle shape.
- Place the fatayer on a baking sheet lined with parchment paper. Brush the tops with the beaten egg wash.
- Bake in the preheated oven for 15-20 minutes, or until the fatayer are golden brown.
- Remove from the oven and let cool for a few minutes before serving. Enjoy warm or at room temperature.
