Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add 1 small finely chopped onion and cook until softened, about 5 minutes.
  • Stir in 3 cloves of minced garlic and 1/2 teaspoon of red pepper flakes, cook for 1 minute.
  • Carefully add 1/2 cup of vodka to the skillet and let it simmer for 2-3 minutes to cook off the alcohol.
  • Stir in 1 can (28 ounces) of crushed tomatoes and bring to a simmer, then reduce the heat to low and cook for 15 minutes, stirring occasionally.
  • Pour in 1 cup of heavy cream and 1/4 cup of grated Parmesan cheese, stir until the sauce is smooth and creamy.
  • Season with salt and pepper to taste.
  • Simmer for an additional 5 minutes, then remove from heat.
  • Serve over your favorite pasta and enjoy!
