Spicy Salmon and Quinoa Bowl

Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups mixed greens
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
- In a small bowl, mix together the paprika, cayenne pepper, garlic powder, salt, and black pepper. Rub the spice mixture onto both sides of the salmon fillets.
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until the salmon is cooked through and easily flakes with a fork.
- Divide the cooked quinoa among 4 bowls. Top each bowl with mixed greens, sliced avocado, and a spicy salmon fillet.
- Garnish with chopped cilantro and serve with lime wedges on the side for squeezing over the bowl before eating.
