Ingredients
- 4 cod fillets (6 oz each)
- 1/2 cup breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 1 lemon, zested
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 lb mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)

Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine 1/2 cup breadcrumbs, 2 tbsp chopped parsley, 1 tbsp chopped thyme, the zest of 1 lemon, 2 cloves minced garlic, and salt and pepper to taste.
- Brush each cod fillet with 1/2 tbsp of olive oil, then press the breadcrumb mixture onto the top of each fillet to form a crust.
- Place the crusted cod fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, prepare the roasted vegetables. In a large bowl, toss 1 lb of mixed vegetables with 2 tbsp of olive oil, salt, and pepper. Spread the vegetables on a separate baking sheet and roast in the oven for 15-20 minutes, or until tender and slightly caramelized.
- In a small saucepan, melt 4 tbsp of butter over low heat. Add 2 cloves of minced garlic and cook for 1-2 minutes, until fragrant. Season with salt and pepper to taste.
