Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, combine 1/2 cup breadcrumbs, 2 tbsp chopped parsley, 1 tbsp chopped thyme, the zest of 1 lemon, 2 cloves minced garlic, and salt and pepper to taste.
  • Brush each cod fillet with 1/2 tbsp of olive oil, then press the breadcrumb mixture onto the top of each fillet to form a crust.
  • Place the crusted cod fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  • While the cod is baking, prepare the roasted vegetables. In a large bowl, toss 1 lb of mixed vegetables with 2 tbsp of olive oil, salt, and pepper. Spread the vegetables on a separate baking sheet and roast in the oven for 15-20 minutes, or until tender and slightly caramelized.
  • In a small saucepan, melt 4 tbsp of butter over low heat. Add 2 cloves of minced garlic and cook for 1-2 minutes, until fragrant. Season with salt and pepper to taste.
  • Serve the baked cod with the garlic butter roasted vegetables, and enjoy!
