Ingredients
- 8 bone-in, skin-on chicken thighs
- 1/4 cup gochujang paste
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar

- 1 tablespoon grated ginger
- 1/4 cup honey
- 2 tablespoons water
- 2 green onions, thinly sliced (for garnish)
- 1 tablespoon toasted sesame seeds (for garnish)
Instructions
- In a large bowl, whisk together 1/4 cup gochujang paste, 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 3 cloves minced garlic, and 1 tablespoon grated ginger.
- Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the chicken thighs from the marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- While the chicken is grilling, prepare the honey glaze by combining 1/4 cup honey and 2 tablespoons water in a small saucepan over medium heat. Cook for 3-4 minutes, stirring occasionally, until the glaze has slightly thickened.
