Spicy Gochujang Marinated Chicken Thighs with Honey Glaze

Created by: Howcan Team

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1/4 cup gochujang paste
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/4 cup honey
  • 2 tablespoons water
  • 2 green onions, thinly sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  • In a large bowl, whisk together 1/4 cup gochujang paste, 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 3 cloves minced garlic, and 1 tablespoon grated ginger.
  • Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat the grill to medium-high heat. Remove the chicken thighs from the marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  • While the chicken is grilling, prepare the honey glaze by combining 1/4 cup honey and 2 tablespoons water in a small saucepan over medium heat. Cook for 3-4 minutes, stirring occasionally, until the glaze has slightly thickened.
  • Brush the honey glaze onto the chicken thighs during the last 2-3 minutes of grilling, allowing it to caramelize and create a sticky coating on the chicken.
  • Once the chicken is cooked through and the glaze is caramelized, remove from the grill and let it rest for 5 minutes before serving.
  • Garnish with thinly sliced green onions and toasted sesame seeds before serving. Enjoy!

Originating from the vibrant culinary landscape of South Korea, Spicy Gochujang Marinated Chicken Thighs with a honey glaze is a tantalizing dish that perfectly balances heat and sweetness. This fusion of flavors has its roots in traditional Korean cuisine, where gochujang, a fermented chili paste, is a staple ingredient. The dish gained popularity in the United States through the innovative creations of Korean-American chefs, who skillfully combined traditional Korean flavors with Western influences. Today, this dish can be savored in renowned Korean barbecue restaurants and trendy fusion eateries. The key to perfecting this dish lies in achieving the ideal balance of spicy gochujang and the rich sweetness of the honey glaze, resulting in tender, succulent chicken thighs bursting with complex flavors. For an authentic experience, seeking out a restaurant with a skilled Korean chef is recommended, but adventurous home cooks can also recreate this dish with high-quality gochujang and locally sourced honey.
