Sparkling Rainbow Cake

Ingredients
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- Gel food coloring (red, orange, yellow, green, blue, purple)
- 1 cup powdered sugar
- 1-2 tablespoons sparkling sugar or edible glitter
Instructions
- Preheat the oven to 350°F. Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together 2 1/2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Set aside.
- In a large bowl, cream 1 cup of softened butter and 2 cups of granulated sugar until light and fluffy. Add in 4 eggs, one at a time, beating well after each addition. Stir in 1 tablespoon of vanilla extract.
- Gradually add the flour mixture to the wet ingredients, alternating with 1 cup of whole milk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly into 6 small bowls. Add a few drops of gel food coloring to each bowl to create the colors of the rainbow: red, orange, yellow, green, blue, and purple. Stir until the colors are well combined.
- Pour each colored batter into the prepared cake pans, one color per pan. Tap the pans on the counter to remove any air bubbles and smooth the tops with a spatula.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Once the cakes are completely cool, place the purple layer on a serving plate or cake stand. Spread a thin layer of powdered sugar on top. Place the blue layer on top and repeat the process with each color, creating a rainbow cake.
- Sprinkle the top of the cake with 1-2 tablespoons of sparkling sugar or edible glitter for a sparkling effect.
