  • Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the chipotle marinade over the chicken. Seal the bag or cover the dish, and marinate in the refrigerator for at least 2 hours, or overnight for best results.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes.
  • While the chicken is grilling, prepare the mango salsa by combining 2 diced ripe mangoes, 1/2 finely chopped red onion, 1/4 cup chopped cilantro, 1 minced jalapeno pepper, and 2 tablespoons lime juice in a bowl. Season with salt to taste and mix well.
  • Serve the grilled chipotle chicken with a generous spoonful of mango salsa on top. Enjoy!
