Instructions

  • Preheat the oven to 375°F (190°C).

  • Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each chicken breast with the chipotle BBQ mixture.
  • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • While the chicken is baking, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, balsamic vinegar, dried thyme, red pepper flakes, salt, and pepper on a baking sheet.
  • Roast the vegetables in the oven for 15-20 minutes, or until they are tender and slightly caramelized.
  • Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving.
