Instructions

  • In a large bowl, mix 2 cups of cooked, shredded chicken, 1 cup of shredded cheddar cheese, 1/2 cup of diced red onion, 1/4 cup of chopped fresh cilantro, 1/4 cup of diced jalapeno peppers, 1 teaspoon of ground cumin, 1/2 teaspoon of chili powder, and 1/4 teaspoon of cayenne pepper.
  • Place a large skillet over medium heat and add 1 tablespoon of vegetable oil.
  • Place a flour tortilla in the skillet and spoon a quarter of the chicken mixture onto one half of the tortilla.
  • Fold the other half of the tortilla over the filling and press down gently with a spatula.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining tortillas and chicken mixture, adding more oil to the skillet as needed.
  • Cut the quesadillas into wedges and serve hot.
