Ingredients
- 2 pounds ground wild boar meat
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 eggs
- 1/4 cup ketchup
- 1/4 cup BBQ sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 2 pounds of ground wild boar meat, 1 finely chopped onion, 2 minced cloves of garlic, 1 cup of breadcrumbs, 2 eggs, 1/4 cup of ketchup, 1/4 cup of BBQ sauce, 1 tablespoon of Worcestershire sauce, 1 teaspoon of smoked paprika, 1/2 teaspoon of cayenne pepper, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix until well combined.
- Transfer the meat mixture to a greased loaf pan, shaping it into a loaf shape.
- Bake in the preheated oven for 45 minutes.
- While the meatloaf is baking, prepare the spicy BBQ glaze. In a small saucepan, combine 1/2 cup of BBQ sauce, 2 tablespoons of honey, 1 tablespoon of hot sauce, and 1 teaspoon of apple cider vinegar. Cook over medium heat, stirring constantly, until the glaze is heated through and slightly thickened.
- After 45 minutes of baking, remove the meatloaf from the oven and brush the spicy BBQ glaze over the top.
- Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
