  • 1 tablespoon of vegetable oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups of shredded cheese (such as cheddar or Monterey Jack)
  • Sour cream, salsa, and guacamole for serving

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add 1 small diced onion, 1 diced red bell pepper, and 2 minced cloves of garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  • Add 1 pound of ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of paprika, 1/4 teaspoon of cayenne pepper, and salt and pepper to taste. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat.
  • Place a large flour tortilla on a flat surface. Sprinkle 1/2 cup of shredded cheese over half of the tortilla. Spoon a quarter of the beef mixture over the cheese. Fold the tortilla in half to cover the filling.
  • Heat a large skillet or griddle over medium heat. Place the filled tortilla in the skillet and cook for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  • Cut the quesadillas into wedges and serve with sour cream, salsa, and guacamole.

Spicy beef quesadillas have a rich history rooted in Mexican cuisine. This beloved dish features a tantalizing combination of seasoned beef, melted cheese, and spicy peppers, all folded into a warm tortilla. Renowned chefs like Rick Bayless and Aaron Sanchez have put their own unique spins on this classic, elevating it to new heights. The dish has become a staple in Tex-Mex cuisine, with restaurants across the Southwest perfecting their own versions. The key to a perfect spicy beef quesadilla lies in the quality of the beef, the right blend of spices, and the perfect melting cheese. For an alternative method, some chefs add a touch of adobo sauce for an extra kick. Today, the best versions of this dish can be found in authentic Mexican eateries and Tex-Mex restaurants, where the flavors are bold and the ingredients are fresh.
