Ingredients

  • 1 pound of ground beef
  • 1 tablespoon of vegetable oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced

  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups of shredded cheese (such as cheddar or Monterey Jack)
  • Sour cream, salsa, and guacamole for serving

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add 1 small diced onion, 1 diced red bell pepper, and 2 minced cloves of garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  • Add 1 pound of ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of paprika, 1/4 teaspoon of cayenne pepper, and salt and pepper to taste. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat.
  • Place a large flour tortilla on a flat surface. Sprinkle 1/2 cup of shredded cheese over half of the tortilla. Spoon a quarter of the beef mixture over the cheese. Fold the tortilla in half to cover the filling.
  • Heat a large skillet or griddle over medium heat. Place the filled tortilla in the skillet and cook for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  • Cut the quesadillas into wedges and serve with sour cream, salsa, and guacamole.
