Instructions

  • In a small bowl, mix together the chili powder, cumin, cayenne pepper, and a pinch of salt. Set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes.
  • Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until cooked through, then mix them with the vegetables.
