Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups water
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced jalapeno. Cook for 3-4 minutes until the onion is translucent.
- Add the quinoa, vegetable broth, water, black beans, diced tomatoes, cumin, chili powder, paprika, and cayenne pepper to the pot. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the quinoa is cooked and the soup has thickened slightly.
- Stir in the chopped cilantro and adjust the seasoning if needed.
