  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups water
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  • Rinse the quinoa under cold water using a fine mesh strainer.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced jalapeno. Cook for 3-4 minutes until the onion is translucent.
  • Add the quinoa, vegetable broth, water, black beans, diced tomatoes, cumin, chili powder, paprika, and cayenne pepper to the pot. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the quinoa is cooked and the soup has thickened slightly.
