  • 1 cup shredded cheddar cheese
  • 1 package of refrigerated pie crusts (2 crusts)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
  • Add the ground beef and garlic to the skillet, breaking it up with a spoon. Cook until the beef is browned, about 5 minutes.
  • Stir in the cumin, paprika, chili powder, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat and let the mixture cool slightly.
  • Unroll the pie crusts on a lightly floured surface. Using a 4-inch round cutter, cut out circles from the pie crusts. You should get about 6 circles from each crust.
  • Place a spoonful of the beef mixture onto one half of each circle, leaving a small border around the edge. Top the beef with a sprinkle of cheddar cheese.
  • Fold the other half of the circle over the filling to create a half-moon shape. Press the edges together with a fork to seal the empanadas.
  • Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  • Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
  • Allow to cool for a few minutes before serving. Enjoy!
