Instructions

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix together 2 pounds of ground turkey, 1 cup breadcrumbs, 1/2 cup chopped onion, 2 cloves minced garlic, 1/4 cup chopped fresh cilantro, 2 minced chipotle peppers, 1 tablespoon adobo sauce, 1 teaspoon ground cumin, 1 teaspoon chili powder, 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 beaten eggs.
  • Transfer the mixture to a 9x5 inch loaf pan and press it down evenly.
  • Spread 1/2 cup ketchup over the top of the meatloaf.
  • Bake in the preheated oven for 1 hour, or until the internal temperature reaches 165 degrees F (75 degrees C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.
