Spicy Arrabbiata Chicken and Spinach Ravioli

Ingredients
- 1 lb chicken breast, diced
- 1 package (9 oz) of spinach and cheese ravioli
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 can (14 oz) crushed tomatoes
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Bring a large pot of salted water to a boil. Add the spinach and cheese ravioli and cook according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Pour in the crushed tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally, until the sauce thickens slightly. Season with salt and pepper to taste.
- Add the cooked chicken back into the skillet and stir to combine with the arrabbiata sauce.
- Add the cooked spinach and cheese ravioli to the skillet and gently toss to coat with the spicy arrabbiata sauce.
- Sprinkle the chopped fresh basil over the top and serve hot, garnished with grated Parmesan cheese.
