  • In the same skillet, add the remaining 1/2 cup of olive oil and heat over medium heat. Add the sliced potatoes and cook, stirring occasionally, until they are tender, about 10-15 minutes. Remove from the skillet and drain on paper towels.
  • In a large bowl, beat the eggs and season with salt and pepper. Add the caramelized onions and potatoes to the bowl and mix until well combined.
  • In a non-stick skillet, heat 2 tablespoons of olive oil over medium heat. Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set and the center is slightly runny.
  • Place a large plate over the skillet and carefully flip the tortilla onto the plate. Add 1 tablespoon of olive oil to the skillet and slide the tortilla back into the skillet to cook the other side for an additional 5-7 minutes, or until completely set and golden brown.
