Spanish Tortilla with Chorizo

Ingredients
- 4 tablespoons of olive oil
- 1 large onion, thinly sliced
- 2 large potatoes, peeled and thinly sliced
- 6 eggs
- Salt and pepper to taste
- 1/2 cup of chorizo, diced
Instructions
- Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add the sliced onion and cook until softened, about 5 minutes.
- Add the sliced potatoes to the skillet and cook, stirring occasionally, until the potatoes are tender, about 10 minutes. Add the diced chorizo and cook for an additional 5 minutes.
- In a large bowl, beat the eggs and season with salt and pepper. Add the cooked onion, potatoes, and chorizo to the bowl and mix well.
- Wipe the skillet clean and heat the remaining 2 tablespoons of olive oil over medium heat. Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set and the center is slightly runny.
- Place a large plate over the skillet and carefully flip the tortilla onto the plate. Slide the tortilla back into the skillet and cook for an additional 3-5 minutes, or until the center is set and the bottom is golden brown.
- Slide the tortilla onto a serving plate and allow it to cool for a few minutes before slicing and serving. Enjoy!
