Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder

- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1 avocado, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 2 tablespoons adobo sauce (from canned chipotle peppers)
- 1 tablespoon lime juice
Instructions
- In a small bowl, mix together 1/4 cup ranch dressing, 2 tablespoons adobo sauce, and 1 tablespoon lime juice to make the chipotle ranch dressing. Set aside.
- In a separate bowl, combine 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, salt, and pepper. Rub the spice mixture onto the chicken breasts.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until cooked through. Remove from heat and let it rest for 5 minutes before slicing.
- In a large salad bowl, combine 8 cups of mixed salad greens, 1 cup cherry tomatoes, 1/2 cup corn kernels, 1/2 cup black beans, 1/4 cup red onion, and 1/4 cup cilantro.
