  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 2 tablespoons adobo sauce (from canned chipotle peppers)

Instructions

  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until cooked through. Remove from heat and let it rest for 5 minutes before slicing.
  • In a large salad bowl, combine 8 cups of mixed salad greens, 1 cup cherry tomatoes, 1/2 cup corn kernels, 1/2 cup black beans, 1/4 cup red onion, and 1/4 cup cilantro.
