Ingredients
- 4 cups of broccoli florets
- 2 large potatoes, peeled and diced
- 1 small onion, chopped
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- 2 tablespoons of butter
- 2 tablespoons of all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Sprinkle 2 tablespoons of all-purpose flour over the onion and garlic, and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in 4 cups of chicken or vegetable broth, stirring constantly to avoid lumps.
- Add the diced potatoes and broccoli florets to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
- Stir in 1 cup of milk and 1 cup of shredded cheddar cheese until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
