  • 8 oz rice vermicelli noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 1/2 cup sliced green onions
  • 1/2 cup sliced Chinese BBQ pork or cooked shrimp
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp curry powder
  • 1/2 tsp sugar
  • 1/4 tsp white pepper

Instructions

  • Soak the rice vermicelli noodles in hot water for 5-7 minutes until softened. Drain and set aside.
  • In a small bowl, mix together the soy sauce, oyster sauce, curry powder, sugar, and white pepper. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the beaten eggs and scramble until cooked through. Remove from the wok and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and sliced onion, and stir-fry for 1-2 minutes until fragrant.
  • Add the red bell pepper, bean sprouts, and Chinese BBQ pork or shrimp to the wok. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
  • Add the soaked rice vermicelli noodles and the sauce mixture to the wok. Toss everything together until well combined and heated through.
  • Return the scrambled eggs to the wok and add the sliced green onions. Toss everything together for another 1-2 minutes.
  • Remove from heat and transfer the Singapore Chow Mein Fun to a serving dish. Serve hot and enjoy!
