Shrimp Quesadilla

Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 large flour tortillas
- 2 cups of shredded cheese (such as cheddar or Monterey Jack)
- 1/2 cup of diced tomatoes
- 1/4 cup of diced red onion
- 1/4 cup of chopped fresh cilantro
- Sour cream and salsa for serving
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the shrimp to the skillet and season with 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through. Remove from the skillet and chop into small pieces.
- Place a large non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over the tortilla. Add 1/4 of the cooked shrimp, 2 tablespoons of diced tomatoes, 1 tablespoon of diced red onion, and 1 tablespoon of chopped fresh cilantro on one half of the tortilla.
- Fold the other half of the tortilla over the filling and press down gently with a spatula. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling ingredients.
- Cut the quesadillas into wedges and serve with sour cream and salsa.
