  • 1/4 teaspoon of black pepper
  • 4 large flour tortillas
  • 2 cups of shredded cheese (such as cheddar or Monterey Jack)
  • 1/2 cup of diced tomatoes
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped fresh cilantro
  • Sour cream and salsa for serving

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the shrimp to the skillet and season with 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through. Remove from the skillet and chop into small pieces.
  • Place a large non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over the tortilla. Add 1/4 of the cooked shrimp, 2 tablespoons of diced tomatoes, 1 tablespoon of diced red onion, and 1 tablespoon of chopped fresh cilantro on one half of the tortilla.
  • Fold the other half of the tortilla over the filling and press down gently with a spatula. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining tortillas and filling ingredients.
  • Cut the quesadillas into wedges and serve with sour cream and salsa.
