Shrimp Dumplings

Ingredients
- 1 pound of shrimp, peeled and deveined
- 1/4 cup of water chestnuts, finely chopped
- 2 green onions, finely chopped
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of cornstarch
- 1/2 teaspoon of sugar
- 1/4 teaspoon of white pepper
- 24 round dumpling wrappers
- 2 tablespoons of vegetable oil for frying
- 1/4 cup of water for steaming
Instructions
- In a food processor, pulse 1 pound of shrimp until finely chopped.
- Transfer the chopped shrimp to a mixing bowl and add 1/4 cup of water chestnuts, 2 finely chopped green onions, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of cornstarch, 1/2 teaspoon of sugar, and 1/4 teaspoon of white pepper. Mix well.
- Place a small spoonful of the shrimp mixture in the center of a dumpling wrapper. Moisten the edges with water and fold the wrapper in half, pleating the edges to seal. Repeat with the remaining wrappers and filling.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Place the dumplings in the skillet and cook until the bottoms are golden brown, about 2 minutes.
- Carefully add 1/4 cup of water to the skillet and cover with a lid. Steam the dumplings for 5-6 minutes, or until the wrappers are translucent and the shrimp is cooked through.
- Remove the lid and continue to cook until all the water has evaporated and the bottoms of the dumplings are crispy again, about 2 minutes.
- Transfer the shrimp dumplings to a serving plate and serve with soy sauce or your favorite dipping sauce. Enjoy!
