Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1/4 cup of water chestnuts, finely chopped
  • 2 green onions, finely chopped
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of cornstarch
  • 1/2 teaspoon of sugar
  • 1/4 teaspoon of white pepper
  • 24 round dumpling wrappers
  • 2 tablespoons of vegetable oil for frying
  • 1/4 cup of water for steaming

Instructions

  • In a food processor, pulse 1 pound of shrimp until finely chopped.
  • Transfer the chopped shrimp to a mixing bowl and add 1/4 cup of water chestnuts, 2 finely chopped green onions, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of cornstarch, 1/2 teaspoon of sugar, and 1/4 teaspoon of white pepper. Mix well.
  • Place a small spoonful of the shrimp mixture in the center of a dumpling wrapper. Moisten the edges with water and fold the wrapper in half, pleating the edges to seal. Repeat with the remaining wrappers and filling.
  • Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Place the dumplings in the skillet and cook until the bottoms are golden brown, about 2 minutes.
  • Carefully add 1/4 cup of water to the skillet and cover with a lid. Steam the dumplings for 5-6 minutes, or until the wrappers are translucent and the shrimp is cooked through.
  • Remove the lid and continue to cook until all the water has evaporated and the bottoms of the dumplings are crispy again, about 2 minutes.
  • Transfer the shrimp dumplings to a serving plate and serve with soy sauce or your favorite dipping sauce. Enjoy!

Chinese

Shrimp dumplings, also known as har gow, are a traditional Cantonese dim sum dish. These delicate, translucent dumplings are filled with a savory mixture of fresh shrimp, bamboo shoots, and water chestnuts, all encased in a thin, chewy wrapper. The dish originated in the Guangdong province of China, where skilled dim sum chefs perfected the art of crafting these delectable morsels. Today, the best shrimp dumplings can be found in renowned dim sum restaurants in Hong Kong, Guangzhou, and other major cities with a strong Cantonese culinary tradition. The key to perfect shrimp dumplings lies in the freshness of the shrimp and the skillful handiwork of the chef in creating the thin, yet sturdy, wrappers. For those looking to make shrimp dumplings at home, mastering the technique of pleating the wrappers to create the signature pleated "rose" shape is essential. This dish is a must-try for any dim sum enthusiast, and its popularity has spread beyond China to become a beloved staple in Chinese restaurants worldwide.
