Instructions

  • In a large bowl, combine the shrimp, cabbage, carrots, green onions, garlic, 1 tablespoon of soy sauce, sesame oil, grated ginger, and red pepper flakes.
  • Place an egg roll wrapper on a clean, dry surface, with one corner pointing towards you. Spoon about 1/4 cup of the shrimp and vegetable mixture onto the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Moisten the top corner with water to seal the egg roll. Repeat with the remaining wrappers and filling.
  • In a large skillet, heat 2 inches of vegetable oil to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
  • In a small bowl, whisk together 1/4 cup soy sauce, rice vinegar, honey, sriracha sauce, grated ginger, and minced garlic to make the dipping sauce.
  • Serve the spicy shrimp and vegetable egg rolls with the dipping sauce and enjoy!
