Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 4 cups mixed salad greens
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 1/4 cup sliced green onions
- 2 tbsp sesame seeds
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tbsp honey, 2 tbsp rice vinegar, 1 tbsp sesame oil, grated ginger, and minced garlic. Set aside.
- Season the chicken breasts with salt and pepper. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side, or until cooked through. Remove from heat and let it rest for 5 minutes. Slice the chicken into thin strips.
- In a large bowl, combine the mixed salad greens, sliced red bell pepper, shredded carrots, and sliced green onions.
- Add the sliced chicken to the salad bowl. Drizzle the dressing over the salad and toss to combine.
- Sprinkle sesame seeds over the salad before serving.
