Instructions

  • In a skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced onion and bell pepper to the skillet and sauté until softened, about 3 minutes.
  • Add the sausage to the skillet, breaking it up with a spatula, and cook until browned and cooked through, about 5 minutes.
  • In a separate bowl, beat the eggs and season with salt and pepper.
  • Push the sausage mixture to one side of the skillet and pour the beaten eggs into the empty side.
  • Scramble the eggs until just set, then mix them with the sausage mixture in the skillet.
  • Sprinkle the shredded cheddar cheese over the sausage and egg mixture and let it melt for 1-2 minutes.
  • Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
  • Divide the sausage and egg mixture evenly between the two tortillas, placing it in the center of each.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • Serve immediately and enjoy!
