Ingredients
- 4 large eggs
- 4 pork sausage links, casings removed
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 2 large flour tortillas
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and bell pepper to the skillet and sauté until softened, about 3 minutes.
- Add the sausage to the skillet, breaking it up with a spatula, and cook until browned and cooked through, about 5 minutes.
- In a separate bowl, beat the eggs and season with salt and pepper.
- Push the sausage mixture to one side of the skillet and pour the beaten eggs into the empty side.
- Scramble the eggs until just set, then mix them with the sausage mixture in the skillet.
- Sprinkle the shredded cheddar cheese over the sausage and egg mixture and let it melt for 1-2 minutes.
- Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
- Divide the sausage and egg mixture evenly between the two tortillas, placing it in the center of each.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- Serve immediately and enjoy!
