Sausage and Pepper Breakfast Quesadilla with Avocado

Ingredients
- 4 large flour tortillas
- 1/2 pound of breakfast sausage
- 1/2 red bell pepper, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 1/2 small red onion, thinly sliced
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through, breaking it up into crumbles. Remove from the skillet and set aside.
- In the same skillet, add 1 tablespoon of olive oil and sauté the red bell pepper, green bell pepper, and red onion until they are tender, about 5 minutes. Season with salt and pepper. Remove from the skillet and set aside.
- Wipe the skillet clean and place it back on the heat. Brush one side of a flour tortilla with a little olive oil and place it in the skillet, oiled side down.
- Sprinkle half of the tortilla with a layer of shredded cheddar cheese, cooked sausage, sautéed peppers and onions, and avocado slices. Fold the other half of the tortilla over the filling to create a half-moon shape.
- Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling ingredients.
- Slice the quesadillas into wedges and serve hot. Enjoy!
