Instructions

  • In a large skillet, cook 1/2 pound of breakfast sausage over medium heat, breaking it apart with a spatula, until browned and cooked through, about 5 minutes.
  • Remove the cooked sausage from the skillet and set aside. In the same skillet, add 1 tablespoon of olive oil and sauté 1/2 cup of diced bell peppers until they are tender, about 3-4 minutes. Remove from the skillet and set aside.
  • In a bowl, beat 4 large eggs and season with salt and pepper. Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are scrambled and just set, about 2-3 minutes. Remove from the skillet and set aside.
  • Place a large flour tortilla on a clean work surface. Sprinkle 1/4 cup of shredded cheddar cheese evenly over half of the tortilla. Top the cheese with half of the cooked sausage, half of the sautéed peppers, and half of the scrambled eggs. Fold the tortilla in half to cover the filling.
  • Heat a clean skillet over medium heat. Place the filled tortilla in the skillet and cook until the bottom is golden brown and the cheese is melted, about 2-3 minutes. Carefully flip the quesadilla and cook the other side until golden brown and the filling is heated through, about 2-3 minutes more.
  • Remove the quesadilla from the skillet and repeat the filling and cooking process with the remaining tortilla and filling ingredients.
  • Slice each cooked quesadilla into wedges and serve hot. Enjoy!
