Russian Potato Soup (Solyanka)

Ingredients
- 1/2 pound of beef, cubed
- 1/2 pound of smoked sausage, sliced
- 1/2 pound of ham, cubed
- 1 onion, chopped
- 3 potatoes, peeled and diced
- 1 carrot, grated
- 1/2 cup of dill pickles, chopped
- 1/4 cup of tomato paste
- 4 cups of beef broth
- 1/2 cup of water
- 1/2 cup of sour cream
- Salt and pepper to taste
Instructions
- In a large pot, brown 1/2 pound of beef, 1/2 pound of smoked sausage, and 1/2 pound of ham over medium heat.
- Add 1 chopped onion and cook until translucent.
- Stir in 3 diced potatoes, 1 grated carrot, and 1/2 cup of chopped dill pickles.
- Mix in 1/4 cup of tomato paste, 4 cups of beef broth, and 1/2 cup of water. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot with a dollop of sour cream on top.
