Instructions
- In a medium bowl, mix 1 cup of shredded cheddar cheese with 1/4 cup of diced red onion, 1/4 cup of diced tomatoes, 1/4 cup of chopped fresh cilantro, 1/2 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place 1 large flour tortilla on a flat surface and sprinkle half of the cheese mixture evenly over the tortilla.
- Evenly distribute 1 cup of cooked and shredded chicken breast over the cheese mixture.
- Sprinkle the remaining cheese mixture over the chicken.
- Top with the second large flour tortilla.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Carefully transfer the assembled quesadilla to the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the remaining tortilla, chicken, and cheese mixture.
