Instructions

  • In a medium bowl, mix 1 cup of shredded cheddar cheese with 1/4 cup of diced red onion, 1/4 cup of diced tomatoes, 1/4 cup of chopped fresh cilantro, 1/2 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Place 1 large flour tortilla on a flat surface and sprinkle half of the cheese mixture evenly over the tortilla.
  • Evenly distribute 1 cup of cooked and shredded chicken breast over the cheese mixture.
  • Sprinkle the remaining cheese mixture over the chicken.
  • Top with the second large flour tortilla.
  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
