Ingredients
- 2 cups of poha (flattened rice)
- 1 medium onion, finely chopped
- 1 medium potato, diced
- 1/2 cup of green peas
- 2-3 green chilies, finely chopped
- 1/2 teaspoon of mustard seeds
- 1/2 teaspoon of cumin seeds
- 1/4 teaspoon of turmeric powder
- 1/4 teaspoon of red chili powder
- 1/4 teaspoon of sugar
- Salt to taste
- 2 tablespoons of oil
- 2 tablespoons of fresh coriander leaves, chopped
- 1 tablespoon of lemon juice
- 2 tablespoons of roasted peanuts
- 2 tablespoons of fresh grated coconut (optional)
Instructions
- Rinse the poha in a colander under running water for a few seconds. Drain and set aside.
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add green chilies and onions. Saute until the onions turn translucent.
- Add diced potatoes and green peas. Cook for 3-4 minutes until the potatoes are tender.
- Add turmeric powder, red chili powder, sugar, and salt. Mix well.
- Add the rinsed poha to the pan and gently mix everything together. Cook for 2-3 minutes until the poha is heated through.
- Turn off the heat and add lemon juice, chopped coriander leaves, roasted peanuts, and grated coconut (if using). Mix well.
- Serve hot with a side of fresh lemon wedges and enjoy!
