  • 1/2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • In a food processor, combine 1/2 cup basil leaves, 1/4 cup pine nuts, and 2 cloves of minced garlic. Pulse until finely chopped.
  • With the food processor running, slowly pour in 1/2 cup of extra virgin olive oil until the mixture is well combined and smooth. Add 1/2 cup grated Parmesan cheese and pulse until blended. Season with salt and pepper to taste.
  • In a large bowl, combine 2 cups of halved cherry tomatoes and 8 oz of cubed fresh mozzarella. Toss with the prepared pesto until evenly coated.
  • Garnish with additional basil leaves and pine nuts if desired.
  • Serve immediately and enjoy!
