Instructions

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  • Add the broccoli florets to the skillet and cook for 3-4 minutes until tender-crisp.
  • Pour in the chicken broth and heavy cream, and bring to a simmer. Cook for 2-3 minutes until the sauce thickens slightly.
  • Stir in the cooked chicken and penne pasta, and toss to coat everything in the sauce.
  • Add the grated Parmesan cheese and toss again until everything is well combined.
  • Season with salt and pepper to taste.
