Ingredients
- 8 oz of penne pasta
- 2 chicken breasts, diced
- 2 cups of broccoli florets
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 teaspoon of red pepper flakes
- 1/2 cup of chicken broth
- 1/4 cup of heavy cream
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Add the broccoli florets to the skillet and cook for 3-4 minutes until tender-crisp.
- Pour in the chicken broth and heavy cream, and bring to a simmer. Cook for 2-3 minutes until the sauce thickens slightly.
- Stir in the cooked chicken and penne pasta, and toss to coat everything in the sauce.
- Add the grated Parmesan cheese and toss again until everything is well combined.
- Season with salt and pepper to taste.
- Serve the spicy chicken and broccoli pasta hot, and enjoy!
