Ingredients
- 1 block (14 oz) of extra firm tofu, pressed and cut into cubes
- 2 tablespoons of cornstarch
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of maple syrup
- 1 teaspoon of sesame oil
- 1/4 cup of creamy peanut butter
- 1 clove of garlic, minced
- 1 teaspoon of grated ginger
- 1/4 teaspoon of red pepper flakes
- 1/4 cup of water
- 4 cups of mixed vegetables (such as broccoli, carrots, and snap peas)
- 1 tablespoon of sesame seeds, for garnish
- 2 green onions, sliced, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the tofu cubes with 2 tablespoons of cornstarch until evenly coated.
- Arrange the tofu cubes on the prepared baking sheet and bake for 25 minutes, flipping halfway through, until crispy and golden brown.
- In the meantime, prepare the spicy peanut sauce. Cook over medium heat, stirring constantly, until the sauce is smooth and heated through.
