Orzo Soup

Ingredients
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion, carrots, and celery. Cook for 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional 1 minute.
- Pour in 6 cups of vegetable or chicken broth and bring to a boil.
- Stir in 1 cup of orzo pasta, dried thyme, dried oregano, and a bay leaf.
- Reduce the heat to a simmer and cook for 10-12 minutes, or until the orzo is tender.
- Season with salt and pepper to taste.
- Remove the bay leaf and discard.
- Ladle the soup into bowls and garnish with fresh parsley.
- Serve hot and enjoy!
