Instructions

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced onion, carrots, and celery. Cook for 5 minutes until the vegetables are softened.
  • Add the minced garlic and cook for an additional 1 minute.
  • Pour in 6 cups of vegetable or chicken broth and bring to a boil.
  • Stir in 1 cup of orzo pasta, dried thyme, dried oregano, and a bay leaf.
  • Reduce the heat to a simmer and cook for 10-12 minutes, or until the orzo is tender.
  • Season with salt and pepper to taste.
  • Remove the bay leaf and discard.
  • Ladle the soup into bowls and garnish with fresh parsley.
  • Serve hot and enjoy!
