Orzo Pasta with Lemon and Parmesan

Ingredients
- 1 cup of orzo pasta
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1/4 cup of fresh lemon juice
- 1/2 teaspoon of lemon zest
- 1/4 cup of grated parmesan cheese
- Salt and pepper to taste
- 2 tablespoons of chopped fresh parsley
Instructions
- Cook 1 cup of orzo pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
- Add the cooked orzo pasta to the skillet, along with 1/4 cup of fresh lemon juice and 1/2 teaspoon of lemon zest. Toss to combine and heat through for 2-3 minutes.
- Remove the skillet from heat and stir in 1/4 cup of grated parmesan cheese. Season with salt and pepper to taste.
- Garnish with 2 tablespoons of chopped fresh parsley before serving.
- Serve hot as a side dish or light main course. Enjoy!
