Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

  • In a separate bowl, mix together 1/3 cup vegetable oil, 3/4 cup orange juice, 2 tablespoons orange zest, and 1 beaten egg.
  • Stir the wet ingredients into the dry ingredients until just moistened.
  • Gently fold in the chopped cranberries.
  • Pour the batter into the prepared loaf pan.
