Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 3/4 cup fresh orange juice
- 2 tablespoons orange zest
- 1 egg, beaten
- 1 1/2 cups fresh or frozen cranberries, coarsely chopped
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine 2 cups of flour, 1 cup sugar, 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
- In a separate bowl, mix together 1/3 cup vegetable oil, 3/4 cup orange juice, 2 tablespoons orange zest, and 1 beaten egg.
- Stir the wet ingredients into the dry ingredients until just moistened.
- Gently fold in the chopped cranberries.
- Pour the batter into the prepared loaf pan.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then remove the bread from the pan and cool completely on a wire rack before slicing.
