  • 4 boneless, skinless chicken breasts
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of chopped sun-dried tomatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • 4 large potatoes, peeled and diced
  • 4 cloves of garlic, minced
  • 1/2 cup of milk
  • 4 tablespoons of butter
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together 1 cup of shredded mozzarella cheese and 1/2 cup of chopped sun-dried tomatoes.
  • Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Stuff each chicken breast with the mozzarella and sun-dried tomato mixture, then secure the openings with toothpicks.
  • Rub the chicken breasts with 2 tablespoons of olive oil and sprinkle with 1 teaspoon of Italian seasoning, salt, and pepper.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • While the chicken is baking, place the diced potatoes and minced garlic in a large pot. Cover with water and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender.
