Mofongo

Ingredients
- 4 green plantains, peeled and cut into 1-inch pieces
- 1 cup of pork rinds (chicharrones)
- 4 cloves of garlic, minced
- 1/4 cup of olive oil
- Salt to taste
Instructions
- In a large pot, bring water to a boil and add the plantain pieces. Cook for about 10-15 minutes, or until the plantains are tender.
- While the plantains are cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and cook until golden brown, then remove from heat and set aside.
- Once the plantains are tender, drain them and transfer to a large mixing bowl. Using a masher or the back of a wooden spoon, mash the plantains until smooth.
- Add the pork rinds to the mashed plantains and continue mashing until well combined. Season with salt to taste.
- Pour the garlic-infused olive oil over the mashed plantains and pork rinds, and mix well to incorporate all the flavors.
- Shape the mofongo mixture into individual serving-sized balls or use a mold for a decorative presentation.
- Serve the mofongo alongside your favorite protein or stew, and enjoy!
