Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together 1/4 cup white miso paste, 2 tablespoons mirin, 2 tablespoons soy sauce, 2 tablespoons rice vinegar, 2 tablespoons brown sugar, 1 tablespoon sesame oil, 2 cloves minced garlic, and 1 tablespoon grated ginger.
  • Place the sliced eggplants on a baking sheet lined with parchment paper. Brush both sides of the eggplant slices with the miso glaze.
  • Bake in the preheated oven for 20-25 minutes, or until the eggplant is tender and the glaze is caramelized.
  • Remove from the oven and sprinkle with sliced green onions and sesame seeds before serving.
