Miso Glazed Cod with Roasted Vegetables

Ingredients
- 4 cod fillets (6 oz each)
- 1/4 cup white miso paste
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame oil
- 1 pound mixed vegetables (such as bell peppers, zucchini, and carrots), cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sesame seeds and sliced green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup white miso paste, 2 tablespoons mirin, 2 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, minced garlic, and grated ginger to make the miso glaze.
- Place the cod fillets on a baking sheet lined with parchment paper. Brush the miso glaze over the top of each fillet, covering them evenly.
- Roast the cod in the preheated oven for 12-15 minutes, or until the fish is cooked through and the glaze is caramelized.
- While the cod is roasting, toss the mixed vegetables with 2 tablespoons of olive oil, salt, and pepper on a separate baking sheet.
- Roast the vegetables in the same oven for 15-20 minutes, or until they are tender and slightly caramelized.
- Remove the cod and vegetables from the oven. Drizzle the roasted vegetables with 1 tablespoon of sesame oil and toss to coat.
- Divide the miso glazed cod and roasted vegetables among 4 plates. Garnish with sesame seeds and sliced green onions.
- Serve immediately and enjoy!
