Instructions

  • In a bowl, beat 4 large eggs and season with salt, pepper, and dried oregano.
  • Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  • Add 1/4 cup diced red onion and 1/2 cup diced bell pepper to the skillet and sauté for 2-3 minutes until softened.
  • Add 1/2 cup diced tomatoes and 1/4 cup chopped kalamata olives to the skillet and cook for another 2 minutes.
  • Pour the beaten eggs into the skillet and gently stir to combine with the vegetables. Cook for 2-3 minutes, stirring occasionally, until the eggs are set but still moist.
  • Sprinkle 1/4 cup crumbled feta cheese over the top of the scramble and let it melt slightly.
  • Remove the skillet from the heat and divide the scramble onto two plates.
