  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
  • Add the lamb cubes and cook until browned on all sides, about 5 minutes. Remove the lamb from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil and sauté the diced onion, minced garlic, and diced red bell pepper until softened, about 5 minutes.
  • Stir in the ground cumin, ground coriander, paprika, cinnamon, and cayenne pepper, and cook for 1 minute until fragrant.
  • Add the long-grain rice to the skillet and cook, stirring constantly, for 2 minutes to toast the rice.
  • Pour in the chicken broth and chopped tomatoes, and season with salt and pepper to taste. Bring to a boil.
  • Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Stir in the cooked lamb cubes and chopped fresh parsley, and cook for an additional 2-3 minutes to heat through.
  • Remove from heat and let the skillet sit, covered, for 5 minutes before serving.
