Instructions

  • In a large bowl, combine the sliced beef, fajita seasoning, chili powder, cayenne pepper, salt, and black pepper. Toss to coat the beef evenly.
  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the seasoned beef and cook for 3-4 minutes, until browned. Remove the beef from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the sliced bell peppers and onion. Cook for 5-6 minutes, until the vegetables are tender and slightly charred.
  • Return the cooked beef to the skillet with the vegetables. Stir to combine and cook for an additional 2-3 minutes to heat through.
  • Divide the cooked rice among 4 serving bowls. Top each bowl with the spicy beef fajita mixture. Garnish with chopped cilantro and serve with lime wedges.
