  • 1/4 cup tzatziki sauce

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring the chicken broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • In a large bowl, combine the chicken pieces, olive oil, dried oregano, dried thyme, garlic powder, salt, and black pepper. Toss to coat the chicken evenly.
  • Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until no longer pink in the center, stirring occasionally.
