Ingredients
- 1 cup quinoa
- 2 cups chicken broth
- 1 pound chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup tzatziki sauce
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, bring the chicken broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- In a large bowl, combine the chicken pieces, olive oil, dried oregano, dried thyme, garlic powder, salt, and black pepper. Toss to coat the chicken evenly.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until no longer pink in the center, stirring occasionally.
- Divide the cooked quinoa among 4 serving bowls. Top each bowl with the cooked chicken, cherry tomatoes, cucumber, Kalamata olives, feta cheese, and fresh parsley.
- Drizzle each bowl with tzatziki sauce before serving.
