Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 1 packet fajita seasoning mix
- 1 bag of tortilla chips
- 2 cups shredded Mexican blend cheese
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- 1/4 cup sliced jalapenos (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips and cook until no longer pink, about 5-7 minutes. Add the fajita seasoning mix and stir to coat the chicken. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onion. Cook until the vegetables are tender-crisp, about 5 minutes. Remove from heat.
- On a large baking sheet, spread out the tortilla chips in an even layer. Sprinkle half of the shredded cheese over the chips. Top with the cooked chicken, bell peppers, and onion. Sprinkle the remaining cheese over the top.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle the diced tomatoes, black olives, and cilantro over the nachos. Add sliced jalapenos if desired.
- Serve the loaded chicken fajita nachos with dollops of sour cream on top. Enjoy!
